Recipes and advice for a teen who feeds herself?

I work, i use most of the money to buy good organic food, and i eat it myself. I do have a mother, but she is gone every other week and we rarely see eachother. She is a good cook, but for the past couple of years she has eaten little or she eats very bad food.





So are there simple, quick and easy things I can make?





I basically live off eggs, avocados, olives, dairy products, chicken, beef, salmon, tuna, berries, tomatoes, and occasionally bread.





I love it, but its getting old, and I'm running out of ways to prepare canned tuna! especially for school.....

Chicken Fajitas





Ingredients:


* 2 pounds boneless chicken


* 1 onion, thinly sliced


* 1 red or green bell pepper, sliced


* 2 teaspoons chili powder


* 1/2 teaspoon ground cumin


* 1/4 teaspoon salt


* 1/2 cup chicken broth


* 1 tablespoon fresh lemon juice


* 8 to 10 warm flour tortillas


* 1/2 cup Cheddar cheese, grated








Cut chicken across the grain into 1/2 inch diagonal strips. Place in a crockpot. Top with onion, bell pepper and lime. In a small bowl, combine chili powder, cumin, salt and broth. Pour mixture over chicken. Cover and cook on low for 6 to 7 hours or until chicken is tender. Spoon several slices of chicken mixture with sauce into center of each warm tortilla. Fold over. Top with nonfat sour cream, cheese and tomatoes.

Baked Honey-Dijon Salmon


This is a wonderful way to prepare fresh salmon fillets in the oven. Be sure to make extra, your family will be begging for more! over 700 5-star ratings


1/4 cup butter, melted


3 Tbs Dijon mustard


1 1/2 Tbs honey


1/4 cup dry bread crumbs


1/4 cup finely chopped pecans


4 tsp chopped fresh parsley


4 (4 ounce) fillets salmon


salt and pepper to taste


1 lemon, for garnish


1 Preheat oven to 400 degrees F (200 degrees C).


2 In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.


3 Brush each salmon fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with the bread crumb mixture.


4 Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper, and garnish with a wedge of lemon

CROCK POT MACARONI %26amp; CHEESE





2 c. dry macaroni


2 lb. box Velveeta cheese


1 stick butter


3 c. milk





Cook macaroni until almost done. In crock pot on high, mix butter and cheese cut in small pieces until melted. Add macaroni, milk and stir well. Set crock pot on low until meal time, stirring occasionally.

Crispy Parmesan Chicken Breasts





鈥?1/3 cup KRAFT 100% Grated Parmesan Cheese


鈥?1/4 cup seasoned dry bread crumbs


鈥?1/4 teaspoon paprika


鈥?1/4 teaspoon salt


鈥?1/4 teaspoon black pepper


鈥?6 boneless, skinless chicken breast halves


鈥?3 tablespoons butter or margarine melted





1. Pre-heat oven to 400 Degrees, Mix cheese, crumbs and seasonings in a shallow dish


2. Dip chicken in butter, coat with cheese mixture, place in a shallow baking pan


3. Bake 20 minutes or until chicken is cooked through

Fresh veggie salad


box macaroni noddles


cut up some brocolli, califlower, red peppers, black and green olives,zuchinni,cherry tomatoes, and any other crunchy veggie you like. Mix in some coked macaroni and add Italian sald dressing. I use homemade seven seas the one you mix with the envelope, red wine vinegar, and oil it's really good on this but any italian will do. Were all hooked on this in the summer


Canned tuna---try chopping up some lettuce and celery and adding that to your tuna with little mayo and lemon juice. Mix it all in and spread on lightly toasted bread Yummy


Baked or grilled chicken with slices of avacado on whole grain toast
This recipe is very very good and very easy.


Chicken casserole:


Take some cooked chicken, it can be made any way you like, I use about 4 chicken breast, boil and shred. Then take 2 cans each of cream of chicken and 2 cans cream of mushroom soups (dont add the water though) and mix it all together with the shredded chicken and add 1 cup or so of sour cream, mix well, then add all to casserole dish and top off with cooked stuffing, spread all over and bake @ 375 for 35-40 min.

Cook the meat in a crock pot with different spices. Then, just heat up frozen veggies, one serving at a time.

For school, have you tried cooking chicken breasts on the weekend and slicing to use them in sandwiches, salads, and wraps during the week? Add sprouts, lettuce (not iceberg), tomatoes, bell peppers, cucumbers, fresh basil %26amp; rosemary, avocado, or cheese. (You can broil the chicken breasts - put them in the broiler for 5-10 minutes, flip them over, cook for 5-10 min, more, check to see if they are cooked through. I always finish mine off in the microwave cause I can't seem to get them to cook through without burning on the outside. Marinades can be added for flavor.) Or egg salad sandwiches on whole-grain bread.


Don't be afraid to eat good whole grains and other fruits and veggies.


I encourage you to invest in a few good cookbooks and read through them - not just the recipes but the other stuff in the intro. Many cookbooks have info about cooking methods - I learned a lot about cooking this way.
I never buy organic, but a couple things you mentioned are easy to prepare. Chicken and beef can be roasted, which is super easy (get the details online but basically you just stick it in the oven adn set the timer). Do you like omelets? Pretty much anything can be put in an omelet and be good, and they're fast. You can make a veggie version with mushrooms, onions, green peppers, or make it a meaty one with bacon (if you eat it) or sausage or even pepperoni. Food Network and Kraft both have great instructions and videos that will show you teh basics.
There are a lot of things you can do with chicken. It seems like you eat really healthy. Have you ever tried ground turkey? Well i love avacados and if you make a turkey burger, which trust me I dont even like turkey, season it right and put some avacado with tomoatoes and a little onion in it its a great burger. If you go in the salad dressing aisle the kraft dressings some of them also say marinades make the best chicken. I usually cut the chicken into pieces marinade them for a couple hours and then fry them in a pan you don't even need any oil. Try eating it over rice which is also very healthy for you. instead of using bread you can make wraps they have all different kinds out there now. If you put chicken, avacado, lettuce and tomato in a tortilla wrap it would make a great meal.
Salsa and chips! Chop up tomatoes and avocados, pepper and salt, lime = homemade salsa.





Also, a really good dish is microwaved salmon. Put some celery sticks and garlic cloves sliced in half on the bottom of glassware, set the salmon on top, put soy sauce (or any other sauce mixture you like) on top, (if you're going for an asian taste, use sour plums by rubbing them over the salmon and crushing them slightly), add water (until its right below the surface of the salmon), then microwave for about 10 minutes depending on size of portion. It's really fast and depending on your sauce it tastes really good.
